I love Pecan Pie as much as YOU do but recipes for Pecan Pie are ten-a-penny! I always want to try and give you a little something extra if I can, because I love you. So this is EXTRA extra! It’s got everything you could dream of in a Pecan Pie but with a delicious fudgey brownie perfectly shoe-horned into the middle. Dreamy!

Recipe –

For the Base…
120g plain flour
45g light soft brown sugar
120g cold butter, chopped

bit…
85g dark 70% chocolate
85g unsalted butter
165g caster sugar
2 lg eggs
25g cocoa powder
60g plain flour
¼ tsp salt
¼ tsp powder

For the Pecan Pie Topping…
115g roasted and chopped
75g maple syrup
75g light soft brown sugar
75g double cream
50g butter
¼ tsp salt
¼ tsp cinnamon
¼ tsp
extra pecans for decoration

    Hopefully you can answer me a question, in the videos & in some photos I’ve seen the showcases where you have the cupcakes.

    My question is: Are they refrigerated or are they normal showcases? If they are normal, how do you keep cupcakes in good condition without being in the refrigerator?

    Your videos have been very inspiring, I use some of your recipes to create new ones, for example I used your chocolate sponge in the Snickers cake, your italian meringue, your cookie cheesecake and made a S’mores cake using those. I am a much better baker now just by watching you.
