    Understanding the chemistry of cooking makes you a better cook, Knowing how to tweak a recipe to achieve the desired affect you are looking for whether it be Flavor, Texture, or Color the understanding of how things affect each other helps you work with the ingredients and equipment that you have and gives you the knowledge resources to receive accolades from family, and friends which gives the confidence to cook at your full potential. Thank You Dan for the beginning of the understanding that takes a lifetime and is never completed, but the further we go the more successes and less failures we have and come to a place where we love a challenge to test the stuff we are made of, and refine our expertise into a fine art.

    Dark chocolate always wins when just eating chocolate, but there are some recipes where milk chocolate is better suited. As far as blondies go, my grandma would make the chocolate chip/pecan version every year just for the holidays. So gooey and delicious – but she always called them chip-a-roos, never blondies.
