This week on wars we baked up batches of our favorite after school , rich, chocolatey brownies. Our chefs baked up batches by Ina Garten and Martha Stewart/ Lewis (of Baked bakery fame) to figure out whose dark,luscious brownies were , and whose literally crumbled under the competition.

    The parchment paper and cocoa powder are great techniques. Glad we could
    inform. Which restaurant are you at would love to stop by some time for a
    tasty treat, especially if you serve salted caramel brownies >>winning!!!
    Also we are going to be having a t-shirt design competition coming up, so

    They were, just too soft, but molten lava cake soft, which isn’t
    necessarily a bad thing just not what you are going for with brownies

    Love the way BC and Judith work together. Aside from the knowledge BC
    imparts, he’s just fun to watch. Love this show!!! Always have had an issue
    with consistency in brownie baking…I know have the confidence to try

    Wow…BC rocks! What an amazing combo…funny…confidence in front of the
    camera ….incredible know how in the kitchen….Why hasn’t this show been
    picked up by a tv network?? Looking at the other shows on the tube….this

    <<wayyyyyy jealous of ya'll chomping on brownies right now. swore ina's
    recipe would have been awesome…how can you go wrong with like 18lbs of
    butter and 6 lbs of chocolate? oh well. yummy episode.

    chocolate+butter do not always equal a great brownie.

    the flavor was awesome, but that much butter and chocolate sort of caused

    We actually like being on youtube. Networks are awesome, but by being
    online for free, it means that everyone can check us out, whether or not
    they can afford fancy cable packages. We like reaching all kinds of folks.

    Buy a cheap 10 dollar kitchen scale at your local big box store. Measuring
    by weight is the best for baking, and a good digital scale makes life so
    easy

    i have never liked Brownies because it is always too sweet. i may like it
    this time because of recipe wars.I will reduce sugar in formula and hope it
    comes out good

    if you try a nice dark chocolate and cut the sugar a bit, you should get a
    brownie that is rich, but not super sweet.

    BC didn’t win the pad thai recipe either. He also didn’t win French Onion
    Soup, the flan episode, the chocolate souffle episode, and the chili
    episode, just to name a few. BC’s a winner, but sometimes he picks recipes
    that just aren’t.

    See, I like the old school heirloom scales. They look nice, and that is
    what I learned on, but by all means for time, price, and dare I say,
    accuracy go electric….. (NOOOOOOOO !!!! one hit wonder Neville

    Jamaica would def have worked ….. However, I feel like dessert should

    we followed the recipe exactly. Perhaps the food network version of the
    recipe was screwed up a touch? It’s different from the version in her book.

    One way to salvage an overcooked (not burned) brownie: Chop it into chunks
    and throw it into a nice homemade chocolate ice cream!

    Made Martha’s three times and now everyone is asking for double batches.
    This time I am going to toast the walnuts. Perfect topping where no
    frosting is needed. Cut lightly with a serrated knife to start and then a
    warm, wet chef’s knife straight down and the topping doesn’t break down and
    crumble.

    Even try 70% chocolate that goes from dark to intense etc…not just the
    semi-sweet bars that might already be too sweet…you are only good as your
    ingredients!

    Just one more thing, if you take greater care with the parchment and fold
    it to the width of the pan and not just crunch it in, the sides of all your
    brownies will be perfect.

    wow, lots of comments. We were more worried about taste of consistency than
    the sides of our brownies being perfect, but you’re right, we definitely
    could have taken greater care with our parchment. Sometimes we rush. If
    you’ve watched a few episodes, you’ll see that BC isn’t the most polite. He
    gestures with utensils, says “bad boy” a lot (we’re turning it into a
    drinking game) and acts like an idiot. we like him anyway.

    Well the only thing that I saw was that I use a 13x18x1 nonstick pan with
    baking spray and half way I tap the tray to the wire rack of the oven, and
    let them for 35 min, I don’t have a picture but next time I will send you
    one with the final result.

    I DON’T GET IT, bcuz I made the INA GARTEN version and it came out
    EXCELLENT for me to the point that I have taken orders for those particular
    brownies so u must of did something incorrect along the way.

    I do everything differently.. and mostly how you say not to. My brownies
    are actually really soft, sweet and rich- to the point of people I don’t
    even know offering me money to make them more. It’s so tiring when people
    say ‘don’t do this’ because they heard from someone it wasn’t the ‘right’
    way. Oof. People need to experiment and do what works for them.

    You used a whisk! The chocolate burned while over the boiling water. The
    water was too hot… but if you used a rubber spatula the chocolate
    wouldn’t have burned.

    Hmm I tried out Ina Garten’s recipe too and yes they did turn out a little
    crumbly. However, it wasn’t dry as there was the fudgy texture when you
    chewed it; just that it didn’t hold that solid. One suggestion, is to
    refrigerate the brownies for the cooling process. My second batch was
    refrigerated and it held up much better. Though I’m still working on how to
    modify this to make it less crumbly.
