Who knew yesterday’s leftovers could be today’s rich and brownies? Jax shows you her favorite recipe!

1 (15 oz) can black beans, rinsed & drained
3 Tbsp canola oil
3 eggs
⅔ cup sugar
½ cup cocoa powder
1 tsp vanilla extract
½ tsp baking powder
Pinch of salt
½ cup semisweet chocolate chips, divided

Preheat oven to 350°F.

Place beans and oil in a food processor, blender or immersion blender. Cover and process until combined.

Add eggs, sugar, cocoa, vanilla, baking powder and salt. Cover and process until smooth. Stir in half of chocolate chips.

Pour into a 9-inch square baking pan coated with spray.
Sprinkle remaining chocolate chips on top.

Bake for 20-25 minutes or until a toothpick inserted near center comes out clean. Cool on a wire rack. Cut into bars.

What if you replaced the oil with avocado? would that be pushing the
healthy boat out a little too far?

    awkwardness ;)

I made a similar recipe and although it was good, the texture as on point,
it was drier in the mouth than ooey gooey brownies. I’ll def make it again
    for my celiac friend though.

I was all excited till I saw this wasn’t a vegan recipe. If I ever make
this I’ll use applesauce in place of the eggs.

I’ve made these and they’re more like a mix between cake and brownies but
    still really good.

I just tried this recipe! They aren’t that sweet so if you want your
brownies to be as sweet as box-brownies then I recommend 3/4-1 cup instead
of 2/3 cup of sugar. either that or add more chocolate chips on top-I
prefer more chips. If you like your brownies extremely fudgy then I’d add
only 2 eggs. I personally prefer my brownies in between fudgy and cakey so
I used the original 3 eggs. These will be great before workouts, and maybe
even for breakfast since they’re so filling! The people who I served these
to couldn’t even tell these weren’t normal brownies!
