Gluten free, oil free, and super easy to make!!
-1 c rolled oats
-1 1/4 c. Bob’s Red Mill Brownie mix (I’ve only tried it with this brownie mix but you’re welcome to try any other mixes)
-1 tsp baking powder
-1 tsp baking soda
-1/2 tsp sea salt
-2 tbsp chia seeds
-6 tbsp water
-1 c plant milk
-1 tsp vanilla extract
-2 tsp apple cider vinegar
-1/3 cup dark chocolate chips (or any other chocolate chips you want to use)
-Carob sauce: carob powder + water
-Make your chia eggs by combining the chia seeds with the water. Mix and set aside for at least 15 minutes.
-Using a blender or food processor, grind the oats into a flour.
-In a small bowl, add apple cider vinegar to the baking soda and baking powder and mix together. -Whisk together the flour, brownie mix and sea salt. Once combined, add all the other ingredients except the chocolate chips and mix until evenly combined. Fold in the chocolate chips.
-Heat a large nonstick pan over medium heat then spoon about 1/4 cup of the batter into the pan. Flip when bubbles appear and start to pop (1-2 minutes). Cook until browned on both sides.
-To make Carob sauce: add a spoonful of carob power in a small bowl and slowly combine water in increments until a saucy consistency is reached.
-Top pancakes with fruit (or toppings of choice) and drizzle with carob sauce and top with fruit.
