Here is what you’ll need!

Cookies & Cream Brownie Bars
Serves 10-12


1 box brownie mix, prepared according to package instructions
24 ounces cream cheese, softened
¾ cup sugar
2 eggs, beaten
1 tablespoon vanilla extract
36 sandwich cookies

PREPARATION
Preheat oven to 325°F/165°C and grease a 9×13 baking pan.
Prepare the brownie mix in a bowl.
In a separate bowl, mix together the cream cheese and the sugar until there are no lumps.
Add the egg and vanilla, stirring until evenly combined.
Spread the brownie batter in an even layer on the bottom of the pan.
Place 24 of the sandwich cookies in a single layer on top of the brownie batter. To fill in the edges, cut 6 of the cookies in half and nudge those in.
Pour the cheesecake batter on top, spreading it evenly over the cookies.
Crush the remaining 6 cookies and sprinkle on top of the cheesecake batter.
Bake for about 45 minutes, until the edges are slightly golden brown and the middle is slightly jiggly.
Cool and chill for at least 2 hours.
Slice, then serve!

    Yum! You can change up the flavors too! Just imagine mint Oreos and adding
    about 1/2 teaspoon of mint extract and green food coloring (if wanted) to
    the cheesecake for a minty explosion of flavor! Or peanut butter/Reece’s
    Oreos and adding about 1/4-1/3 cup of peanut butter to the cheesecake
    batter for the ultimate peanut butter and chocolate combo! Or make blondies
    and use golden Oreos and add sprinkles for funfetti cheesecake or perhaps
    lemon Oreos and lemon zest and extract to the cheesecake filling? ?

    I made them for thanksgiving. followed all the recipe thoroughly. but my
    brownie layer didn’t want to bake at all. I put it back in for almost
    another 30 minute but it still didn’t cook all the way through.
