Healthy Fudge Brownie Recipe / Vegan / Gluten Free / Oil Free / low fat
This is a recipe from my friend Brandi of the Vegan 8. All her recipes have only 8 ingredients or less and are easy to make. What makes this brownies recipe healthy? These are zucchini brownies! You make these brownies from scratch. This is a vegan brownie recipe, oil free brownie recipe, gluten free brownie recipe and low fat brownie recipe. So you can see what makes a healthy brownies recipe! They are also nut free and suitable for any oil free vegan as well. Also, since we are using oat flour, this is also a great healthy brownie recipe with oats!
You can make these chocolate brownies become fudge brownies or more cake like brownies. I do prefer my brownies to be fudgy, so I lean towards a vegan fudge brownie recipe, and if I can also make it a gluten free fudge brownie recipe, that's a huge plus. So it was great to find this healthy chocolate brownie recipe that was both vegan and gluten free, as well as oil free brownies and low fat brownies!

First thing you want to do is preheat the oven to 350 degrees. The batter won't take very long to make, so want you oven preheated and ready to go so you can bake your brownies right away. Because the sooner you bake them, the sooner you get to eat them!
All we're going to do, is take all the ingredients, except the chocolate chips, place them in a food processor and process until smooth. Once it's smooth you can taste the batter and notice that it's not too sweet, and this is because we still need to add the chocolate chips to the brownie batter. Go ahead and add only 6 tablespoons of chocolate chips to the mixture. We want to stir the chocolate chips into the batter.
Next, pour the batter into a 9” x 5” baking pan. Brandi recommends spraying the pan with a non-stick spray. Since I don't have any, I'll be lining the pan with parchment paper instead. Take the remaining 3 tablespoons of chocolate chips and sprinkle them on top of the brownie batter.
Bake for 22-25 minutes until they have a dry/shiny look on top and have pulled away from the edges. If you prefer a cake like brownie, cook a few minutes longer until the toothpick comes out CLEAN.
Once you take these healthy zucchini brownies out of the oven, let them cool for about 45-60 minutes, or else they will fall apart. I know the waiting is tough, but this healthy vegan brownie recipe is worth the wait!
These are so soft and the perfect consistency. No one will ever know that we have veggies hiding in these brownies! All this flavor in an oil free vegan brownie recipe! You can easily add some ice cream on top for a brownie a la mode!
