SOMETIMES A FLOP CAN TURN INTO SOMETHING AMAZING, LIKE THESE KETO BROWNIES WITHOUT ANY NUT FLOURS

I accidently stumbled upon this keto recipe when I was testing a recipe for ChocZero. I was trying to make a mochi cake, but instead made brownies. I was amazed how chewy and fudgy these brownies turned out AND they are nut ! You can even make them dairy free if you wanted by use ghee or coconut oil in place of butter.

Anyone who tries these brownies will have a hard time believing they are sugar free. They are that good!

KETO BROWNIES
Make 9 large brownies

½ cup inulin powder
¼ cup unflavored protein powder
1 teaspoon egg white powder
½ teaspoon xanthan gum
1 teaspoon salt
½ cup coconut milk
¼ cup monkfruit blend sweetener
¼ cup brown monkfruit sweetener
7 oz sugar free chocolate , melted
2
¼ cup butter, softened
1 teaspoon vanilla

1️⃣ 01:15 – In a large bowl, whisk together inulin powder, protein powder, egg white powder, salt and xanthan gum.
2️⃣ 01:42 – Using an electric mixer on low speed, slowly stir in the coconut milk until combined and a goopy texture forms.
3️⃣ 01:59 – Add monkfruit sweetener and brown monkfruit sweetener. Mix in eggs, butter and vanilla until combined.
4️⃣ 02:21 – Melt chocolate in a small bowl in the microwave at 30 second intervals, stirring in between, until melted. Or melt chocolate using the double boiler method. Add melted chocolate to the bowl and mix to combine.
5️⃣ 02:38 – Scoop brownie batter into the prepare and bake at 325 degrees for 30-35 minutes or until brownies are set in the middle.
6️⃣ 02:57 – Let sugar free brownies cool before cutting in to 9 squares. Store at room temperature or the refrigerator for up to 4-5 days.

    As I watched this video, I found I had ALL the ingredients except coconut milk. I did have Almond milk though. I made these (with Almond milk) and…OMG! They are so good and fudgy!. I’m making a second recipe right now as I’m typing.
