Sweet potato + water + 1 box of brownie mix = brownies! Click “See More” to see recipe below 🙂

Vegan Brownie Sundaes

1 extra large sweet potato, or 2 medium
1/2 cup water
1 box vegan brownie mix, I used Dunkin Hines Chewy Fudge Brownie

Optional Toppings:

6 Cocomels + a splash of almond to make a caramel sauce
vegan ice cream, I used Ben and Jerry's Dairy Free 7 Lawyer flavor
strawberries, raspberries, , or chopped walnuts
sprig of mint

Peel sweet potato and cut into chunks. Cover with water and boil for about 10 minutes or until fork tender.

Drain water and cool slightly.

Transfer potatoes to a blender along with about 1/2 of a cup of water and blend until very smooth.

Mix 1 cup of potato puree with 1 box of brownie mix and stir to combine.

Transfer to a lightly greased baking and bake at 350 degrees for about 30-40 minutes or until the center is set. Insert a toothpick to see if it comes out (mostly) clean.

Serve warm with vegan ice cream and strawberries 🙂

    I love this series! Thank you for making it!
    And I love brownies, but I’ve never made them with sweet potato. I made brownies with chickpea, with coconut flout, normal flour… I’ll have to try your recipe too, maybe with wheat flour and unsweetened cocoa, because I don’t trust the brownie mixes that I saw in my country…
