Sweet potato + water + 1 box of brownie mix = amazing vegan brownies! Click “See More” to see the recipe below 🙂


1 extra large sweet potato, or 2 medium
1/2 cup water
1 box mix, I used Dunkin Hines Fudge Brownie

Optional Toppings:

6 Cocomels + a splash of almond milk to a caramel sauce
vegan ice cream, I used Ben and Jerry’s Dairy Free 7 Lawyer Bar flavor
strawberries, raspberries, chocolate chips, or chopped
sprig of mint

Peel and cut into chunks. Cover with water and boil about 10 minutes or until fork tender.

Drain water and cool slightly.

Transfer potatoes to a blender along with about 1/2 of a cup of water and blend until very smooth.

Mix 1 cup of potato puree with 1 box of brownie mix and stir to combine.

Transfer to a lightly greased baking dish and bake at 350 degrees about 30-40 minutes or until the center is set. Insert a toothpick to see if it comes out (mostly) clean.

Serve with vegan and strawberries 🙂

    I love this series! Thank you for making it!
    And I love brownies, but I’ve never made them with sweet potato. I made brownies with chickpea, with coconut flout, normal flour… I’ll have to try your recipe too, maybe with wheat flour and unsweetened cocoa, because I don’t trust the brownie mixes that I saw in my country…

    I’m a little confused. Would a restaurant use a boxed mix? A chain place like Chili’s maybe, but not an upscale restaurant.
