OMG!! Cosmic Brownie Ice Cream Sandwiches!

Put a new spin on a 90s favorite, cosmic brownies!! Make these Cosmic Brownie ice cream sandwiches in just three easy steps!

PREP TIME: 10 MINS
FREEZE TIME: 2 HOURS
TOTAL TIME: 2 HOURS AND 10 MINS
YIELD: 8 ICE CREAM SANDWICHES

INGREDIENTS

16 Cosmic Brownies
Vanilla ice cream
Rainbow Chip Sprinkles

DIRECTIONS

1. Line an 8×8” pan with parchment paper and cover with an even layer of Cosmic Brownies. Top the brownie layer with 9 large scoops of vanilla ice cream. Spread the ice cream evenly over the brownies and freeze for at least one hour, until completely solid.

2. Once frozen, sprinkle the ice cream layer with rainbow chocolate chips and top with the remaining Cosmic Brownies. Freeze the entire pan for another hour or so, until completely solid.

3. When ready to serve, slice into 8 even ice cream sandwiches and enjoy!
