Makes 12-15 Brownies

200g (70oz) Digestive Biscuits/ Graham Crackers
125g (4 1/2oz) Unsalted

the brownie:

115g (4oz) Unsalted
120g (4oz) Dark Chocolate -Minimum 70% Solids
190 (7oz) Soft Light Brown Sugar
130g (4 1/2oz)Caster Sugar
1 1/2 tsp Vanilla Extract
4 Large Eggs
140g (5oz) Plain Flour, Sifted

the topping:

400g (14oz) Large Marshmallows

one 20x30cm (8x12in) tray

    Kate, you always make recipes look so easy. Very inspiring.
    Kate i’m really struggling making Gypsy Tart. I’m ashamed to admit but i’ve
    had eleven attempts at making it and failed every time. I’m not a quitter
    as you can see. Any tips you can help me with would be really appreciated.
    I know beating the milk/sugar alot is essential and i do but as soon as i
    put into the oven it turns back to liquid. I have tried different
    temperatures and followed several peoples recipes…..I’m lost as to what
    to try next….HELP . Thankyou Kate
