We did it again.
210g plain flour
85g melted vegan butter (no low-fat spread!)
100g caster sugar
100g light brown sugar
40g cocoa power
100g chocolate, dark as possible
50 ml (1/4 cup) boiling water
pinch of salt
Generous handful of dark choc chips, white choice chips
Large splash of soy milk
Preheat the oven to 180 degrees, and line a 9 inch square baking tin with greasproof paper.
On a low heat, melt the dark chocolate and leave to the side.
In a big bowl, sift the flour, cocoa powder and salt. Mix with a whisk to combine.
Add the melted chocolate.
Melt the butter, add the hot water, and stir.
Add to your flour mix and mix well.
*It will be VERY thick and cookie-dough like in texture, but stick with it*
Add the choc chips and pop into the baking tin (8-9 inches roughly)
Use your hands to press the mix out evenly to the edges, and pop on the middle shelf for 25 mins.
Leave to cool before slicing. (They taste amazing out the fridge the next day! What is it with that?)
