We viewed this recipe over at Tasty along with 18 million others & thought to ourselves, wow, what a shame they keep promoting the most unhealthy food & contributing toward obesity, diabetes, heart disease, environmental destruction and animal cruelty. We know we can make anything taste just as good without harming anyone so we are putting our cooking skills where our mouth is!
We promise you will LOVE these vegan black bean cheesecake brownies!
Ingredients;
15oz can of black beans, drained & rinsed well
1 cup sugar
1/2 cup unsweetened apple sauce
4 tbsp unsweetened vanilla almond milk
1 tbsp ground flax seed
Blend well.
1/2 cup Bob’s red mill gluten free flour (chickpea mostly)
1/4 cup cocoa
1 tbsp corn starch
mix well & then add wet to dry & fold in
1/2 cup vegan chocolate chips (enjoy life brand & literally)
Put into parchment paper lined glass baking dish
Tofu Cream Cheese
1 carton silken tofu firm
1/4 cup of sugar
1 tsp vanilla (non alcohol)
1 tsp lemon juice (fresh)
1/2 tsp salt
Blend well in food processor.
Add to top of brownie mix and use a knife handle to marble in.
Bake at 350 for 40 mins.
ENJOY! Sure these have a bit of sugar, but they are animal puss free & low fat & packed with black bean goodness! Our goal here is to EXCEED the garbage with healthier versions. You are going to love these & everyone who tries them will, too! DO NOT tell them they are vegan or they have beans! (unless they have allergies to any of the ingredients)
