    I’ve been baking brownies during the whole quarantine, and for a while I just couldn’t get that beautiful skin. I tried everything, I used different recipes, ingredients, changed the oven, the temperature, and read all about those “theories” of brownie skin. I must’ve baked about 30 brownies and I just couldn’t get a nice glossy skin, until I decided to simply add more butter. I’ve never noticed until then, but I always used to put a little less butter or oil than the recipes ordered (because I was unconsciously trying to make a little more healthy recipe). The first batter I made using a little more butter went perfectly, exactly like I wanted. Long story short, I think the key is fat.
