Something real sinister about the way you said “I need _lots_ of skin.”

I’ve been baking brownies during the whole quarantine, and for a while I just couldn’t get that beautiful skin. I tried everything, I used different recipes, ingredients, changed the oven, the temperature, and read all about those “theories” of brownie skin. I must’ve baked about 30 brownies and I just couldn’t get a nice glossy skin, until I decided to simply add more butter. I’ve never noticed until then, but I always used to put a little less butter or oil than the recipes ordered (because I was unconsciously trying to make a little more healthy recipe). The first batter I made using a little more butter went perfectly, exactly like I wanted. Long story short, I think the key is fat.

LOL i love Adam’s enthusiasm on all food-related topics, but good lord did we go off the deep end on this one. They must have some insanely dank kush in Georgia to make our boy here spring up outta bed and say I MUST KNOW WHAT PUDDING SKIN IS

Both your refractometers measure refraction, the one for protein just has a different scale. You have not measured protein content

You’ve finally lost your mind, I’m surprised you lasted this long. Send me the brownies without the skin, I’ll make sure they don’t go to waste.
